  We've definitely been trying to push development over the last few months to actually see what is possible... This obviously isn't going to stop, we'll always continue exploring roast development. 
  
  What I can say that we've learned is - latins seem to be happiest at around 136-138. Ethiopians can push into the 142s. 
  
  Latins can go lighter without cereal, but what we've noticed is that you lose acidity and structure to some degree (depending on the coffee). Pepe's sidra is definitely on the lighter side of where we're taking latins. But our cupping bowls of that coffee are still of appropriate strength. So, it shouldn't be a solubility issue.

  oh for sure! ha wasn't taking it as negative.. although certianly very open to critical feedback.. ya'll actually brew the coffee a ton of differnet ways and we actually learn a ton from everyones experiences! 
  
  Definitely interesting to see what coffees can get pushed lighter than others... very much making some progress on figuring this out!

  we do take TDS of a lot of cupping bowls... we've taken so many measurements over the years and also our own ability to taste TDS is remarkably consistent at this point that we don't really need to measure everything any more... but everything all our cupping bowls are within 1.25 -1.3 tds. 
  
  Everything stays the same for the cupping bowl, grind, water, agitation etc... so gives a pretty good look on solubility

  We're also finding that some of the latins, specifically, not as much with Ethiopians, the coffees have been slightly lighter than our preferences as well... But, gotta cross a line to find a line.

  currently our roast / development goals are go pull back the latins closer to 135 / 136 and the Ethiopians between 138- 142 depending on density

  Shade will always take longer to dry.  I have no experience of being able to correlate shade dried specifically = more sweetness. theres about a million variables in there that could be doing that. 
  
  Also, there are a ton of variables happening in brewing as well.

  fully agree... i think its just important to keep it an open dialogue... sooo much experimentation is taking place at the farm, at the roaster, and at brewing.. part of the goal of this discord is the attempt to close that feedback loop and to open conversation between the parts of coffee that don't really get a chance to speak to each other

  haha ultimately, i will be making the decision of how the coffees will be roasted. But I do love community and conversation that is critical and constructive. We all know that you can't please everyone.

  Honestly the sub has fire selections. We release so much coffee and have such a high standard for quality there’s no possible way to not FOMO at some point.
