I just brewed the Ruvumu again, and it was actually really good—more focused and clean than before.\n\nThat said, my personal preference is still the chaotic complexity you get right when the coffee arrives. Even things like the \"Drink after 2 weeks\" note on SEY's boxes—I try not to look at it. 😂 Of course, because of shipping time, the coffee often ends up being around two weeks old anyway. I do get asked to evaluate coffees from time to time, and I actually have some coffees right now that I'm waiting to rest before trying. Roasters usually want people to taste their coffee after it has stabilized and reached its intended profile. Of course, my attitude is basically: \"Haha, I'm not listening to you guys!\" 😂",

Even things like the \"Drink after 2 weeks\" note on SEY's boxes—I try not to look at it. 😂 Of course, because of shipping time, the coffee often ends up being around two weeks old anyway. I do get asked to evaluate coffees from time to time, and I actually have some coffees right now that I'm waiting to rest before trying. Roasters usually want people to taste their coffee after it has stabilized and reached its intended profile. Of course, my attitude is basically: \"Haha, I'm not listening to you guys!\" 😂",

I still believe that if a coffee is roasted properly, it shouldn't make a dramatic difference whether it's freshly roasted, two weeks off roast, or even four weeks off roast.
