  this is a really good question and honestly i'm not entirely sure myself. I would know the answer in a place like Ethiopia or Colombia, but i'm not familiar with Peru or Dwight's processing to really know whats happening here. But best guess - it's different levels of maturation times and seed densities.

  Very much my opinion, but I'd say very little. Learning how to taste coffee is the most important part of learning how to roast. You'll only roast coffee as well as you can taste it. You can learn to taste coffee by cupping a bunch of other roasters' coffees of varying levels of roast development. If you can taste coffee well and understand roast development from a taste perspective, the roasting of it comes quite easily. But, there is no short cut to learning how to taste it well

  yeah, i mean certain things are easy... like natural processed coffees look very different than washed coffees when roasted.. so processing does play a role... so does variety and definitely so does density and maturation times

  yeah, so there is a farmer at the highet elevation in chorso that we specifically asked snap to seperate out this year for the first time. So, its very isolated, with very specifc variety.
